Rerun the installation, as custom installation and delete the ext2/3 partitions. You should also be able to create new FAT partitions. Then after saving the changes you can remove the CD and reboot.

Debian GNU/Linux is the distro you need.

This is wrong. Debian is one of the best server distro's there is. It maybe slightly harder than RH, MD etc but it's a great server distro.
